There is not much better than a fresh warm Berry Scone for Valentines Day!
This weekend I finally purchased the first edition of the new Magazine called Where Women Cook! I’ve been watching as they prepared for this new edition since last Fall. So excited! You can check out their website here http://wherewomencook.com/
They also have a creative site http://www.wherewomencreateblog.com/ Be sure to check it out!
Anyways…my daughter had me run to the store to get more berries so she could whip this treat up for us for Valentines Day! She found a fabulous recipe in it for Blackberry Scones and did a bit of changing to it to make it her own, just the way she liked it! She added a bit more cinnamon and spice and changed the berries a bit! The recipe and article was from Serena Thompson of The Farm Chicks. I have been following her for a while as well. Check her website out here http://www.thefarmchicks.com/
So here is my daughters version of her Berry Scones
2 cups flour
1/3 cup sugar
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 cup butter
1 egg, slightly beaten
1/4 cup milk
1/2 heaping cup frozen blackberries
1/2 heaping cup frozen raspberries
Preheat oven 450 degrees. Combine flour, sugar, baking soda, and cinnamon in large bowl. Cut butter into your flour mixture until the butter is the size of peas. Add egg, milk and mix well. Fold in your berries now. Then put dough on floured surface and form into 1 inch thick pieces. My daughter shaped hers into circles. Put on ungreased cookie sheet and bake until lightly browned, which was about 14 minutes. Cool on a wire rack and make your berry glaze now.
For my daughters Berry Glaze she mixed
1 Tablespoon butter
1 Tablespoon heavy cream
1 cup powdered sugar
1 teaspoon vanilla
Mix butter and berries in small bowl and microwave until butter is melted and berries are soft. Mash this together then add cream, sugar and vanilla. Stir together and add more cream if you need to. If it gets too thin just add more powdered sugar.
Drizzle glaze onto scones now. My daughter made her glaze thicker and put more on each scone!
This scone is just bursting with berries and although it looks SWEET it doesn’t taste super sugary! It’s perfect!
So simple you still have to time to whip some up yourself! What are you waiting for? What did you treat yourself to this Valentines Morning?
From all of us here at Wendys Hat – Happy Valentines Day my friends!
