These Banana Cream Cheese Mini Muffins would be the perfect thing for Spring Brunch or Mothers Day!
I was busy last week so my team over here at Wendys Hat have been busy helping me create the perfect recipe for a Spring Brunch just in time for Mothers Day! Do you like muffins? Me too! You can make these yourself. Here’s what you need to know.
Banana Mini Muffins
1 cup whole wheat flour
1 cup all purpose white flour
2 teaspoons baking powder
1/2 cup salted butter, melted
1 cup packed brown sugar
4 ripe bananas, peeled and mashed
1/2 teaspoon cinnamon
2 teaspoons vanilla
Heat oven to 350.
Grease mini muffin pan with cooking spray.
Melt butter in microwave and add sugar. Stir in eggs, bananas and vanilla. Add dry ingredients and mix until moist.
Using a 2 tablespoon scoop, place batter into muffin tins. Bake 13-15 minutes or until golden brown and centers are cooked.
Cool completely on a wire rack.
Cream Cheese Frosting
4 ounces of cream cheese, softened
2 tablespoons butter, softened
1 teaspoon vanilla
1 cup powdered sugar
Chocolate Covered Sunflower Seeds
Mini Muffin Liners (optional)
Piping Bag (optional)
Beat cream cheese, butter and vanilla in a mixing bowl until well combined. Slowly add powdered sugar and beat on low speed. Increase speed to whip the frosting to the consistency you desire. Usually only takes a few minutes.
Place a dollop of frosting onto the muffins. I put my frosting in a piping bag without a tip and flatten the frosting with a butter knife. I used a generous amount because I like frosting.
Decorate the muffins with sunflower seeds. Place muffins in paper liner if desired just before serving.
Serve immediately or refrigerate until ready to serve.
Makes 30-36 mini muffins
