Happy October! You’re going to LOVE my Cast Iron Skillet Pumpkin French Toast Bake!
I’m always trying to find a new way to take a favorite family food and turn it into something new. Remember when I took our traditional french toast and switched it up to a baked french toast streusel or when I made them into french toast sticks? Well since it is October, and you know that’s when my love for pumpkin takes over, I switched it up again but this time with a twist. Introducing Cast Iron Skillet Pumpkin French Toast Bake!
Cast Iron Skillet Pumpkin French Toast Bake Recipe:
1 loaf Whole Wheat bread, cubed
6 large eggs, room temp
2½ C whole milk
1 C pumpkin puree
¾ C sugar
2 TBSP vanilla extract
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
French Toast Directions:
-Put cubed bread in a large bowl. Set aside.
-Whisk together eggs, whole milk, pumpkin puree, sugar, vanilla, and spices until this makes a custard.
-Pour this mixture on the bread making sure that the custard covers all of the bread.
-Cover the bowl and place in the refrigerator overnight.
French Toast Topping Recipe:
1/2 C flour
1/2 C brown sugar
1 tsp ground cinnamon
¼ tsp ground nutmeg
8 TBSP butter, room temp
-Combine flour, brown sugar, salt and spices.
-Cut the butter into small pieces working it into the flour mixture using your fingers.
The end result should look like small nuggets and crumbles.
-Add chopped walnuts on top.
Pumpkin French Toast Bake:
-Preheat oven to 350 degrees.
-Treat the cast iron skillet with baking spray.
-Remove the pumpkin french toast and topping from the refrigerator.
-Spoon the pumpkin french toast mixture into the prepared skillet almost filling it to the top.
-Spread the topping over the french toast mixture being very generous with it.
-Bake at 350 degrees for 45-55 minutes or until the topping turns a darker brown.
-Allow the french toast bake to sit for 10 minutes.
-Serve with sliced fruit, freshly made whipping cream, or warm maple syrup.
